| Moroccan tajine |
Here is a Moroccan Tajine called Apricot Lamb Tajine
Ingredients:
- 500 grams lamb shoulder, cut into chunks
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 cup dried apricots
- 1/2 cup pitted green olives
- 2 tablespoons honey
- 1 tablespoon preserved lemon peel, chopped (optional)
- 1 cup chicken or vegetable broth
- Fresh cilantro leaves, for garnish
Instructions :
- Heat the olive oil in a large tajine or a heavy-bottomed pot over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.
- Add the lamb shoulder chunks to the tajine and brown them on all sides. Remove the lamb from the tajine and set it aside.
- In the same tajine, add the ground cumin, coriander, ginger, cinnamon, turmeric, paprika, black pepper, and salt. Stir the spices for a minute until fragrant.
- Return the lamb to the tajine and add the dried apricots, green olives, honey, and preserved lemon peel (if using). Mix everything together to coat the lamb with the spices.
- Pour the chicken or vegetable broth into the tajine, ensuring that the ingredients are partially submerged. try to put the mixture in a boil, after mines the heat to litlle. Cover the tajine and simmer gently for about 1.5 to 2 hours, or until the lamb becomes tender.
- Once the lamb is tender, uncover the tajine and allow the sauce to reduce slightly for about 10 minutes.
- after that tasting the sauce will help you to adjust the seasoning if it’s necessary. add a little water to the sauce to thin it out, if it’s too thick.
- Serve the Apricot Lamb Tajine hot, garnished with fresh cilantro leaves. It goes delcious if you serve it with couscous.
